I wanted something filling but easy to put together this morning before we started school. So this is what I come up with. Lets get cooking.
Im having some good friends over for dinner tonight, but didn't want a hard menu. So I used my slow cookers and got prepping.
1 large sirloin tip roast seasoned with house seasoning (onion powder, garlic powder, coarse salt and black pepper) and seared on both sides
1/2 bag of baby carrots
Almost a box of beef broth
1 can cream of mushroom
After the beef is seared add carrots. Pour beef broth half way up the roast, then add water until its almost covered leaving the top
uncovered. Top with cream of mushroom soup spreading it evenly. Then add pepper to taste.
Cook on low for at least 7 hours. Shred and serve.
Slow cooker baked sweet potatoes
Mac n cheese( yes velvetta is helping out😋)
Then for my easy dessert....
1 box of butter cake mix(prepared as directed)
1 pealed and diced apple
Cinnamon, allspice, and nutmeg to taste. I just poured.
Baked in a loaf pan on 370 for 50 min until done.
Brown sugar topping
1 stick of butter
Pinch of salt if using unsalted
1/2 cup brown sugar packed
2 teaspoons of milk
Combine and bring to a boil for 2 min, stirring constantly. Pour hot mixture over warm cake.
This is my 1st smoothie that tasted good. Here is the recipe
1 1/2 cups of natural apple juice
1/2 cup greek yogurt plain
1/2 cup mixed berries frozen
1 small banana frozen
1 cup baby spinach torn
honey to taste
blend in a high powered blender in order given. Drink up.
4 large bone in chicken breast or 6 boneless chicken thighs
Clean Italian Dressing
Spinach & Kale mix
Place Chicken in greased slow cooker. Pour 1/2 bottle of dressing over and cook on low 4 hours. Drain off most of the liquid and add Italian Seasoning with 2 cups of chopped Kale/Spinach. Let cook for another hour then shredd meat.
I stuffed mine into a bakes sweet potato. Great as a sandwich too.
I was getting hungry already around 10:00 this morning. So I went to the pantry for a snack. I could grab a cookie, dried fruit, or cut up a apple but I need something to fill me up so I wouldnt cave in later and indulge in junk food. So I came up with a Sandwich twist Here's how I came up with it.
1 sweet potato cooked and split down the middle. (I some leftover from dinner, and warmed it in the microwave)
2-3 slices of deli meat diced (chipotle chicken was nice)
BBQ sauce of choice, only a squirt
Sprinkle of mozzarella cheese or whatever you have on hand; If you can't handle dairy omit it.
While the potato is hot mix in the deli meat, sauce, and cheese if using.
Hope you enjoy. I did
Thanks for reading,
I am on the path of new ways to get good nutrition into my body without eating salads all the time. So when I came across this soup that contained clean ingredients I had to give it a try. The ginger gives it a nice kick while the carrot is sweet and the coconut is creamy. For lunch I just poured it into a coffee mug to warm through but for dinner I would serve grilled shrimp on top and a big spinach and almond salad. I hope you will give this a try. I will let you know if the Fam likes it later on.
So I have decided to make better choices for me and my family from all aspects. Trying to add more veggies with every meal, have veggie has a snack and include veggies in our desserts...yes. I know that it requires a little more planning and creativity but it is worth it.
Lets get to my newest creation of Banana Soft Serve...it is green but, Julia loves it.
3 Frozen bananas cut into slices
1 Big handful of spinach
almond milk or milk of choice
toppings of choice (2 chocolate chip cookies) chocolate syrup
1. Use a high powered food proceseor or blender to combine the Spinach and milk together first.
2. Put frozen bananas in with another splash of milk and let blend until smooth scrapping down sides every so often. Once the bananas are smoth its done. Fold in toppings
You do not have to add Spinach of course, so for your picky eaters leave it out. Use more than 1 fruit...top with granola in the morning for a breakfast change up.
So I now have started my own adventure of making Vanilla!! It turned out great. I had two taste testers and they said it went well with their recipes. So now it is offically on sale.

Play Safe and Be smart in cooking ahead so you can play and still eat
Here is a good list to keep on hand
Dried Fruit & Jerky
