I was really hungry this morning but instead of grabbing a frozen waffle with peanut butter or yogurt I whipped up this beauty for that Julia enjoyed as well. I hope you give this a try.
5 eggs beaten well
1/4 to 1/2 diced red pepper into bite size pieces
1/4 cup of diced zucchini into bite size pieces
1/8 cup of shredded sweet potatoes
1 link of chicken sausage diced into bite size pieces
butter
garlic powder
salt
Preheat Oven 325
In a ovenproof 8 in skillet drizzle olive oil in pan and put sausage, pepper, and zucchini on medium heat. Let cook until veggies are tender. Add Sweet Potato with a little more oilve oil and garlic powder, salt, and any other seasonings to taste. Stir veggies, once potatoes are almost done. Turn down heat to low and add eggs. Run a spatula around the pan then top with pads of thin cut butter, about 1 T. Cook 14-18 min. However you prefer your eggs
