You can use this chicken in so many ways, with taco shells, over rice, enchiladas, nachos, or taco salad. I needed a quick meal today because I have some things I wanted to get done so I looked I what I had on hand. One jar of Salsa in fridge that was barley used so here is what I came up with.
3 boneless chicken breast frozen
1 packet of chicken taco seasoning
1 teaspoon of cumin
1/4 cup chicken broth
1 jar of medium salsa red or green
1 can of reduced sodium black beans drained
Spray Cooker with Pam, Place above ingredients and stir together. Cook on low for 4 hours and shred chicken. Drain some of the liquid before serving.
