This is the time of year where the weather is so unpredictable!! Here you have My Dad making Snow Cream. Many of you have requested his recipe so I told my Mom I would post it for her. I have made it myself but I don't remember if I changed it or not...oops!!! So when I make it I will let you know if I do.
He makes two different versions so I will post both of them.
Vanilla Snow Cream: 1 Gallon
Around 12 quarts of Snow
3 eggs well beaten
2 cups sugar
2 Large cans evaporated milk
3 tablespoons vanilla
3 1/2 cups milk whole or 2 %
Beat the eggs well first, then combine the rest of the ingredients well. Mix in the Snow until all the liquid is absorbed. Then put into contains quickly and freeze.
To Make with Junket Ice Cream Mix: Chocolate
12 quarts of Snow
3 eggs well beaten
2 cups of sugar
2 Large cans of evaporated milk
1 Tablespoon Vanilla
1 Chocolate Junket
1/4 Cocoa Powder or Chocolate Syrup
3 1/2 Cups of Milk
Beat the eggs well first set aside. If using Cocoa Powder combine with sugar then add the rest of the ingredients and the eggs. Mix Snow until all the liquid is absorbed. Then put into containers quickly and freeze or serve immediately.
You can make Vanilla with the Junket Mix as well just make as directed as above: just increase vanilla to 2 Tablespoons. Leave out Chocolate.
Junket Mix is sold where the Ice Cream Syrup is. IGA, Piggly Wiggly, Some Wal-Marts
