Since we will have a few more cold days ahead I thought it would be nice to have another breakfast recipe that could warm and satisfy on a cold wintery day. I love French toast but really don't like to stand over the stove the whole entire time waiting on the entire batch. So I put together a casserole. Let's get cooking shall we...
7 slices of breakfast bread ( cinnamon, brown sugar, pumpkin spice, raisin, etc)
4 eggs beaten well
1 cup milk
1 Tablespoon Sugar
1/2 tsp Vanilla extract
2 Tablespoon Melted Butter cooled
Preheat Oven: 350
Spray a small baking dish with cooking spray or rub with butter. I used a square 8x8 pyrex dish.
Cut bread into small cubes using a serrated knife. Place bread into dish. Mix eggs, milk, sugar, vanilla, and butter. Pour over the bread. Let sit until the mixture has absorbed into the bread. At least 30 min. Bake for 30-35 min or until eggs are set.
Tip: If you do not have breakfast bread but have thick plain bread you can use that instead and add spices. Just add what you like. Cinnamon, Brown Sugar, Pumpkin Spice, Etc.. I would use 1 tsp of spice. Then just follow the direction's above.
