Does anyone have this cookbook? My Mom and Dad gave this to me for Christmas back in 2001. The year I graduated High School!! Yes, I know so long ago... I have used this book a lot. Some recipes really good and not so good. But I have found that if you try things out a couple of times you can make anything work most of the time. At one time I did not like Banana Bread at all. To tell you the truth I did not like Banana flavored anything really. But as you get older your taste buds really do change. Your Parents really do know what the are talking about!! lol Enough about that. Let's get on with the recipe. I changed it only a little adding, chocolate, graham crackers, and vanilla. So here we go.
Prep: 15 min Bake: 45-50 min
Oven: 350
Choose Bananas that are beginning to turn dark for fullest flavor.
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon cinnamon
1/8 teaspoon salt
1 egg
1 cup mashed bananas ( 3 medium or 2 large)
3/4 cup sugar
1/4 cooking oil (vegetable oil)
1/2 teaspoon vanilla extract
1/2 cup crushed graham crackers chunks
1 Hershey Bar
1. Grease and Flour the bottom and 1/2 inch up the sides of loaf pan. In a medium mixing bowl combine flour, baking powder, baking soda, cinnamon, and salt. Make a well in the center of dry mixture; set aside.
2. In another bowl. Combine the egg, bananas, sugar, oil. Add egg mixture all at once to the dry mixture. Stir just until moistened. Batter should still be lumpy. Fold in graham crackers.
3. Put half the batter in the bottom of the pan. Place the Hershey Bar inside the loaf pan as you see fit. You can break it into pieces, Chop it up, or Just lay it on top with a few pieces broke up to fit. Then pour your remaining batter on top to cover it completely. Bake in a 350 oven for 50 or until in comes out clean with a toothpick. Let it cool completely before cutting. Store in the Fridge.
We have really enjoyed this version of the Banana Bread. However, I did overcook this batch due to the Potty Break we had...Oh the joys of twins!!! Well, I hope you will give this a try soon. Let me know if you do. As always thank you for taking the time to sit and hang out with me.
