With a heavy dish like Chicken Lasagna you really something lite on the side. I have never made a 7 layer salad before but thought I would give it a try. Of course mine turned out being a 9 layer salad when I was finished, but it turned out really well. I looked at several recipes online and did a combination of a few and added my own flair of course!! So here's what I came up with:
1/2 head of iceberg lettuce washed, dried, and chopped
1/2 bag of romaine lettuce washed, dried, and chopped
grape tomatoes
2 broccoli heads, washed, dried, and chopped into bite size pieces
1 seedless cucumber washed, peeled, and chopped into chunks
3 eggs hard boiled, 1 sliced, 2 chopped
8 sliced bacon cooked and crumbled
Cheddar Cheese Grated
Dried Cranberries
Dressing
1 Cup Lite Mayo
1 Cup Sour Cream
3 tablespoons Milk or half n half
1 packet of ranch dressing or any salad dressing mix you like
black pepper
2 tablespoons sugar
Mix together in a medium size bowl and set in fridge until ready to use,
(You will not use all of the above ingredients. It depends on how big your bowl is. That goes for the dressing as well.)
In a LARGE glass bowl start by adding the lettuce.Always start on the outside working your way in. You can either separate your lettuce or combine, I just combined so it was easier. Then add the grape tomatoes, leave them whole or cut them in half. Next add the broccoli and cucumber. Then another layer of lettuce. Then it time to add the eggs.Season with pepper. No salt is needed. Place the sliced egg around the outside of the dish so you can see it. Then place the chopped egg all around working your way in. Next add your cranberries, bacon, cheese.The dressing is your final layer. Dollop it all around then spread it making sure to cover from edge to edge. Place in fridge for at least 12 hours up to 24.
The traditional 7 layer has frozen peas but I didn't have any so I just left them out. You can do so many things with this salad. Add short cut pasta, peppers, olives, goat cheese, feta cheese, banana peppers, etc
