So I usually record the Rachel Ray show everyday so I can watch at some point during the week. This week was Waffle Week. I love Waffle's.They can be any kind savory or sweet. I bet you didn't know you could make dessert's in your waffle maker did ya. That will be a later post. This is what I did...
1 Package of Bacon
Maple Syrup the real stuff
Buttermilk or sour milk
Pancake Mix
cracked black pepper
1/2 tsp vanilla
Directions: Preheat Oven to 375. Line a baking sheet with a oven proof cooling rack. Place your bacon on top of the cooling rack. Then brush the bacon with maple syrup. Bake for 18-20 or until nice a crip. Just keep an eye on it. Depending on how fatty the bacon is will depend on how much time it will take.
While the bacon is cooking: Follow the pancake mix directions of your favorite mix except use buttermilk in place of regular milk. If you do not have buttermilk on hand you can make sour milk. Just put 1 tablespoon of white vinegar or lemon juice in the bottom of a measuring up and fill to the 1 cup line. Let sit for 5 min. Then you have made your own Sour Milk.
Once the bacon has cooled add it to the mix. I added 6 slices of finely chopped bacon. Next add 1 tablespoon or more of maple syrup and cracked black pepper. Just enough to taste. Then 1/2 teaspoon of vanilla. Mix just until combined. Do not over mix.
Let your Pancake Mix set for at least 10-15 min
Heat your waffle iron to the medium setting always. Pour your batter. You know it is done when the steam has stopped coming out. I like mine a little crispy. Serve with warm Maple Syrup.
