With this BIG SNOW STORM coming I thought I would post a soup that is non traditional. However the taste is really good. I made it for my co-workers at Duke Raleigh and they really seemed to enjoy it as well. If you need a change from just chili give this a try.
6 slices of Bacon cut up small ( use good quality bacon)
1 small sweet onion cut up small
3 cloves garlic pressed or chopped finely
1 Tablespoon Ketchup
1 Tablespoon Worcestershire sauce
1 T Chili Powder
3/4 cup Chicken Broth
1 can diced Tomatoes with Jalapenos or plain if you don't want the added heat
3 cans Low Sodium Black Beans Drained not rinsed
Cook bacon until brown. Add onions, cook until soft. Then add garlic cook for 1 min on Medium Heat. Watch closely so it does not burn. Stir often. Add the rest of the ingredients and bring to a boil. Let it simmer for at least 30 min.
Serve with Sour Cream, Cheese, and Tortilla chips.
Give this a try on a cold day and let it warm you up from playing outside with the kids all day.
