On the weekends I like to make either a Sausage or Canadian Bacon Casserole for Breakfast. The best thing about this recipe is you can do it the night before or I have even done it on a whim first thing in the morning and let it sit for as long as I can. The Asby Family always has this on Thanksgiving morning too. But don't wait for a special occasion. I have cut the recipe in half!! So here we go...
1/2 lb ground sausage or 1/2 package of canadian bacaon. Cooked and drained
4 slices of your favorite bread (we use white)
4 eggs
1 cup milk
Salt & Pepper to taste
1 cup shredded cheddar cheese
Spray square baking dish with Pam. Line the bottom with bread. Spread meat over bread. Beat eggs then add milk, salt, and pepper. Combine and pour over sausage. Sprinkle cheese on top. Bake 350 for 35 min or until eggs are set.
If making for a crowd. Do the same as directed above except increases to the following
1 1/2 lbs. sausage, fried and drained or whole package of Canadian bacon
6 eggs, beaten well
1 1/2 c. milk
1 1/2 c. grated cheddar cheese
Salt & pepper to taste
