I saw this recipe of the Food Network the other day and decided to give it a try. I am not a big fan of Peppers but I like the flavor of the Yellow and Orange. They have a much lighter and sweeter taste. I changed the recipe up just a little to fit our taste. So here's what I did...
I pound of dark ground turkey meat
1/2 small grated onion
1 tablespoon of dried parsley
1 large egg
3 tablespoons ketchup
3 garlic cloves minced or pressed
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
1/3 cup of freshly grated parmesan cheese
1/4 cup plain dried bread crumbs
a couple dashes of worcheshire sauce
a handful of shredded mozzarella cheese
2 zucchini
2 yellow pepper
1 orange pepper
1 jar of your favorite Marinara sauce
In a bowl combine all of the above ingredients except the Ground Turkey. Then fold in the turkey but don't overmix. Set in the fridge until ready to stuff the vegetables. Cut the vegetables down the middle after washing them. With the small side of a melon baller scoop out the inside of the zucchini being careful not to puncture the flesh. Take the seeds and ribs out the peppers making sure you have a even bowl like surface. Then fill your veggies to the top with the meat mixture. Place in a greased and lined 13x9 baking dish. I put a layer of aluminum foil on the bottom of my pan for easy clean up. Pour as much or as little of the marinara sauce as you like. I used about a half a jar. Bake on 400 uncovered for 45 min or until a thermometer reads 165 and the veggies are tender. The last 5 min I topped each one with Mozzarella cheese and let it brown.
