I used my Nannys recipe and made these yummy mini pumpkin loaves. This is how I made them...
3 Cups GF all purpose flour
3 teaspoons baking powder
3 1/2 teaspoons of baking soda
3 1/ 4 teaspoons of salt
3 cups of sugar or less up to you
3 teaspoons of cinnamon
2 teaspoons of ground ginger
4 eggs beaten
1/2 cup of oil
1/2 cup of water
15 oz can of pumpkin puree
2 carrots shredded
Mix all ingredients and pour into muffin cups or two loaf pans.
muffins cook about 25-30 min
loafs cook 60 min. don't overbake. keep checking the muffins.
To with cream cheese icing our plain. This freezes well just don't add icing.
