I made a Roast Beef with Gravy for Sunday dinner in the Slow Cooker using the beef tip recipe I posted a couple weeks ago. So instead of roast beef open faced sandwiches I turned it into a beef & rice casserole. Delicious...I may say myself. Here's what I did.
About 2 cups of leftover beef shredded
1 cup leftover gravy
1/2 cup cooked onion
1 can cream of mushroom soup
1 1/4 cups of uncooked long grain white rice
3 3/4 cups hot water
Garlic powder to taste
Mix all in a large baking dish sprayed with a non stick cooking spray. Bake @350 for 90 min.
My whole family really liked this meal. This time I used Spicy Ranch and it was just enough kick, but I only used a half packet. I hope you enjoy!!
