Sweet Potatoes are in season right now so I thought I would share a great way to cook a lot of them without to much fuss. I use this method for regular potatoes as well. Let's get "crockn"
What you need:
Depending on the size of your slow cooker will determine how many potatoes you can cook. Wash as many potatoes that can fit in your cooker. Then cut a small slit in each of them with a knife.
Aluminum Foil: wrap each potato tightly
Place all potatoes in cooker. Pile on top of each other. Pour a little water in the bottom to create steam. About 1/4 cup or less. Put the lid on and cook on High 3-4 hours or Low 6 hours. If a knife goes in easily you know they are done.
This is a great way to make a lot a baked potatoes without turning on the oven. I even let mine cool completely in foil and place in freezer bags and lay them flat in my freezer. So then it's easy to grab for a easy side dish or pie. I hope you will give this a try
On a side note, I am feeling much better today!! I will be having a sweet potato for dinner tonight. :)
